Ian Slipacoff is the grandson of Charles Slipacoff who owned the original eponymous butcher shop in the Byward Market. You might say Ian’s got meat in his blood! He started off on the wholesale side of things with his father David Slipacoff—a member of Les Toques Blanches Ottawa. After more than a decade delivering meat to many of Ottawa’s top restaurant and hotels, and watching chefs swoon over their Premium Meat products, he decided to offer the same quality and portion-controlled meats to home cooks.
